There’s something magical about springtime in the South, especially in New Orleans, when
the aroma swirling around the air is a masterful medley of cayenne pepper, lemon, bay leaf, and garlic.
It’s Crawfish Season, and that means good eatin’! Transporting the juiciest, plumpest 'mudbugs' from the
wild waterways of Louisiana to our nation’s capital, we’ll be boiling up crawfish in true N’awlins fashion.

RE-HEAT

Take a 2 gallon stock pot and fill 2/3 of the pot with water, add 1/2 a cup of kosher salt, and 2 lemons cut into halves - squeeze the juice into the water and drop in the lemons. Cover pot and bring to a boil.

Remove the lid, maintain the high heat, and SLOWLY add the crawfish as not to splash the hot spicy water on yourself. Then add, slowly potatoes and corn. Cover the pot and turn off the heat. Set a timer for 12 minutes. Place a colander in the sink, and pour the crawfish, potatoes, and corn from the hot pot into the strainer.

Regionally optional: If desired, sprinkle Creole or Cajun seasoning over the hot bugs before eating for an extra spicy kick! Don’t forget to wash your hands!
